I’ve been testing out some herb and spice mixes from an American company called Casa De Sante which stock a range of Fodmap Friendly certified items. For this dish I used the Lemon and Herb seasoning to marinade a butterflied chicken and the results were delicious, it gave the dish a real burst of flavour. The spice mix contains hing (asafoetida powder) which has the flavour of onion and garlic without the fodmap triggers. When roasting, the lemon peel gets lovely and gnarly, giving the chicken a great smokey flavour. You can find out more about these products and purchase them here.

Low Fodmap Lemon & Herb Butterflied Chicken
1 butterflied chicken (bone in) approx 1.2kg
1 ½ tablespoons of Casa De Sante Lemon Herb Seasoning
1 tablespoon of olive oil
Low Fodmap Herb Roasted Potato Wedges (see recipe here)
Low Fodmap Simple Coleslaw (see recipe here)
2 cobs of BBQ corn (max ½ cob of corn or 43g each)
Pat the chicken dry with paper towel then sprinkle on the Casa De Sante Lemon Herb seasoning. Drizzle over the olive oil then rub the seasoning in until the chicken is evenly coated. Cover and leave the chicken in the refrigerator to marinade overnight (optional).
Preheat oven to 180 degrees.
Place the chicken on a foil-lined tray and cook for 45-55 minutes or until the juices run clear.
Remove from the oven and let rest for five minutes.
Serve with my low fodmap herb roasted potato wedges, simple coleslaw and BBQ corn cobs.
Chicken: Low fodmap. Proteins do not contain carbohydrates and are therefore low fodmap. Ensure that no marinades have been added.

Olive oil: Low fodmap at 1 tablespoon.
